Stainless steel is the default material for most commercial kitchen equipment, but “stainless steel” is not one material. What Is 304 Stainless Steel?

304 is the most widely selected stainless steel grade for commercial kitchen equipment. It belongs to the “18/8” family—roughly 18% chromium and 8% nickel—which gives it stronger corrosion resistance than 201. That makes 304 better suited to wet, humid and frequently washed areas: commercial sinks, work tables, food-preparation surfaces, and any equipment regularly exposed to water, steam or cleaning chemicals.

Its higher nickel content contributes to better corrosion resistance, toughness and fabrication performance compared with 201. What Is 201 Stainless Steel?

201 is a more cost-conscious stainless steel option. Compared with 304, it generally contains more manganese and nitrogen and less nickel, which lowers raw material cost while still providing a stainless, corrosion-resistant surface for many indoor uses. It is suitable for dry indoor applications such as storage shelving, support frames and selected work tables that are not exposed to standing water.

In humid, coastal or chemically aggressive environments, 201 needs more careful maintenance and is more prone to surface rusting over time than 304. It should not be described as “fake stainless steel” or assumed to be poor quality.
